Eating healthy (most of the time) helps us thrive and <a href=\"https:\/\/johannevezina.com\/en\/give-your-brain-the-gift-of-vitality\/\">nourishes both our bodies and minds<\/a>. This is reflected in the theme for Nutrition Month:<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\"><strong>\u201cNourish to Flourish\u201d<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>The work of Nutritionists-dietitians<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In honour of Nutrition Month, I would like to acknowledge the important work that nutritionists-dietitians do every day\u2014from managing chronic diseases to helping people overcome dietary challenges, supporting families, and strengthening community programs for young and old alike. <strong>@Dietitians of Canada<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>A recipe for you, on Nutrition Month<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">To celebrate Nutrition Month, I would like to share one of my recipes which uses roasted buckwheat, a grain that is grown locally in Canada. Buckwheat pancakes are well known, but using roasted buckwheat is a little less so. Being multi-purpose, buckwheat can also be served with lunch or dinner as a substitute for rice, potatoes, or quinoa, and can also be eaten in a salad.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In addition to its pancake version for breakfast, buckwheat may also be prepared as a hot cereal with a plant-based beverage or milk, flavoured with a fruit, cinnamon, and\/or a touch of maple syrup.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>On that note, I wish you a delicious Nutrition Month!<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Johanne V\u00e9zina, Dt.P. Speaker &amp; Nutritionist<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Roasted buckwheat with vegetables<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Preparation: 10 minutes<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cooking time: 15 minutes<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Serves: 4<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ingredients:<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">o&nbsp;&nbsp;&nbsp; 1 cup (250 ml) buckwheat<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">o&nbsp;&nbsp;&nbsp; 1 carrot, diced<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">o&nbsp;&nbsp;&nbsp; 1 yellow bell pepper, diced<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">o&nbsp;&nbsp;&nbsp; 3 green onions, minced<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">o&nbsp;&nbsp;&nbsp; 2 cloves garlic, finely chopped<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">o&nbsp;&nbsp;&nbsp; 1\/2 onion, chopped<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">o&nbsp;&nbsp;&nbsp; 1 tablespoon (15 ml) olive oil<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">o&nbsp;&nbsp;&nbsp; 2 cups (500 mL) chicken or vegetable broth, less salted<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">o&nbsp;&nbsp;&nbsp; Salt and pepper to taste<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Steps:<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1.&nbsp;&nbsp;&nbsp; Heat the oil and brown the onion and garlic.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2.&nbsp;&nbsp;&nbsp; Add the carrot, bell pepper, and green onions and saut\u00e9 for 2 to 3 minutes, on low heat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">3.&nbsp;&nbsp;&nbsp; Add the buckwheat and saut\u00e9 for 2 minutes with the vegetables.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">4.&nbsp;&nbsp;&nbsp; Pour in the broth and bring to a boil.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">5.&nbsp;&nbsp;&nbsp; Cook for 15 minutes over medium-low heat, covered.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">6.&nbsp;&nbsp;&nbsp; Season with salt and pepper to taste.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00a0Recipe by: Johanne V\u00e9zina, Dt.P.
